








This past weekend was gloomy, cold and rainy to which I packed a great deal of work into two days. I can’t that it’s already Monday! To end the month of February I took to the kitchen prepping a tasty Sunday dinner and to bake banana bread. Yes, I know another banana bread recipe…. but my brother gave me a bunch of the overripe fruit in hopes that I would make an appetizing treat to last into the week for breakfast or lunches.
As it poured rain the entire day, it felt right to turn on the ovens not only to heat the house but, to create a level of coziness before ending the busy weekend.
Baking and prepping meals are part of the small goals I set for myself each weekend so, that after a busy work week, I know there will always be a delicious meal waiting in my pantry or freezer at the end of a trying day.

I love using vanilla extract in baking, but lately use a few dollops of Limoncello or Grand Marnier for that added flavor as, the alcohol evaporates.

Question: What is the proper way to store Limoncello? Do you happen to know?

My mom used to store Limoncello on the shelf and I do as well. But, in the summer when you want a refreshing sip for the evening, put the liqueur in the fridge or freezer for an hour or two!!! It’s delicious!!!

Ohhhhhh boy that looks tasty. I absolutely love banana bread, with walnuts too. And then a cup of coffee. Wow!!!

I love banana bread too! I have an old family recipe that is a no-fail:) I do add mini-chocolate chips sometimes. I really enjoy your photos, Kathleen. The three loaves photo is gorgeous! Thank you for sharing. Baking makes me happy, too.

You are most creative in your baking too, I’ve added dried orange flavored cranberries and white chocolate chips to a few recipes.
