Our potted Shamrocks {Oxalis regnellii} are placed in the dining room during the winter months and they have begun to bloom very delicate flowers. These beautiful clover shaped leaves are thought to bring good luck, and amazingly the leaves fold up during the evening then open when sun comes through the window.

I have cooked a whole corned beef this evening in order to have leftovers, particularly to make hash for brunch this weekend. My brother Paul really loves the taste of canned hash, but, I prefer my homemade version with red potatoes and eggs over easy.

  1. Happy St. Patrick’s day, K. Love this post. I have some Irish heritage in my background and my family have always eaten corned beef, cabbage and red potatoes. Exactly the way you prepared your dish. Looks delicious. Look at the Shamrock plant……………..talk about luck of the Irish.

    1. Happy St. Patrick’s day to you!! I looked forward to dinner all day, as we had corned beef, cabbage and red potatoes. Our shamrocks were a gift from a family friend many, many years ago!!!
