What are your favorite types of foods?

We’re just back from Mexico after a week of interacting with the people of Baja learning and appreciating their traditions and customs. I came away with a few tidbits to elevate everyday living at Heath after scouring several markets. I’m forever scouting out ceramic pieces for the kitchen and textured blankets or rugs for the family room, but on this trip, I focused more on the food and spice markets to enhance meals. My favorites types of food are dishes that are simply made with fresh ingredients, and we ate lots of seafood marinated in traditional spices with produce prepared so the flavor wasn’t lost.

Tropical Storm Juliet was 275 miles off the Baja coast on our second day so, beaches were closed due to rough surf. Over the next four day’s fishermen couldn’t take their boats out for fresh seafood, but later in the week I had stuffed poblanos’ with shrimp and rice; chicken with mole sauce [pollo en mole] made with chiles, chocolate, and spices. There was also the shrimp & chicken taco tray with avocado’s, salsa and refried beans.

Breakfast was served each morning on the barefoot terrace and included “cold pressed” juices, organic “pour-over” coffee, fresh fruit from the region, and organic home-made granola. Their house special was “avocado toast” with celery bites, hard boiled organic eggs, avocado, EV olive oil, black salt served on multigrain bread.

And, each evening, I enjoyed winding down by watching a sunset, and feeling the wind kick up from the ocean while sipping a margarita served with torilla chips, salsa and of course guacamole…. it doesn’t get any better …… it’s the perfect way to relax!!!
